Pah-KOOR-ah is the Punjabi name for
"fritters". Serve as a snack
or appetizer with Coriander Chutney or Cucumber Raita.

broccoli florets, zucchini chunks), patted dry

Serves : 6 people (
Procedure:
Combine flour, salt, cayenne peppr
and cilantro in medium bowl. Stir in
water. Add more water, 1 tsp (5 ml) at a
time, until consistency of medium-stiff batter.
Fold vegetable pieces into batter
until well coated.
Remove vegetable pieces, one at a time, from
batter. Cook, a few at a time, in hot
(375 Degree F, 190 Degree C) cooking oil in deep-fryer or large saucepan for
about 2 minutes until golden. Remove to
paper towel to drain.
